The invoice currency depends on the currency assigned to the customer profile. If you have a new customer from the NZ, you can assign NZD currency, so their invoice is in NZD.
If you are unable to see a Currency option, you will have to turn on the multicurrency feature in QuickBooks Online. Multicurrency helps you record foreign transactions easily without worrying about currency conversions. If you are under the Simple Start version you will have to upgrade your account to Essentials or Plus plan to be able to use the multicurrency feature.
Once a currency is assigned to a customer during their profile creation, it cannot be changed for existing profiles. If there is a need to change a customer's currency, it would be best to create a new profile for that customer.
