There's no need to edit the 'as of date' when adding an account, leeskkh. It's auto-filled.
Once the account has transactions, the option to edit it is not possible. You can delete the transactions associated with that account so you can modify the opening balance. Let me show you how:
If you prefer not to delete the transactions, you can create a deposit. Then, subtract the opening balance to the recent QuickBooks balance.
