I am a QBO online accountant and this problem is across at least two of my client company files

We're aware of the situation, and our engineers are working to restore full functionality as soon as possible. In the meantime, you'll want to log out and back in or try a different browser to restore the missing VAT column.
For any transactions created yesterday between 8:45–11:15 AM PT, you'll also need to open and re-save them to update the tax amounts.
