Is it possible to give an accountant only partial access to the QB Online data (for example a class), instead of all of it? When doing business in different countries, different accountants need to report different parts of the business for tax and they should only get access to the data that is relevant for their country and not all.
Does QB have any way of doing that?

The option to grant partial access when adding an accountant is unavailable in QuickBooks Online (QBO). This user doesn't count towards any current user limit since they are under the Company admin user type.

The only way to give a user either a full or limited access (without admin privileges) is to add them as a Standard user. Just refer to this article for the steps and details: Add, delete, or change user access.

As additional option, you may utilize TPE for QBO to export the data out to XLS. You may only share some data to your accountants. Once they need to modify it, you can import the modified data into your QBO by using TPI for QBO. Make sure to set filters to avoid any duplications.

Let me share what a Standard user can do in QuickBooks Online (QBO).
This type user can be set for different levels of access. However, limiting its access to view certain transactions from one class isn't possible. I can see how being able to widen the customization feature is important to you.
