I created two different invoice styles, one for my EURO customer and one for my GBP customers.
The payment/EFT details are different for both customer types. However, when I change the bank details in one, it also changes it in the other. It seems that the "payment details section" of the "content" table when customising the invoice style is shared across all styles.
Surely this cannot be correct. What am I doing wrong ?

It would be my pleasure to provide scenarios about why the bank details will automatically switch while customizing the form in Quickbooks Online.
The same bank information will automatically change if we enter it on the same template and section.
See the sample screenshots below for your reference:
On the other hand, if you enter the bank details into a different field and template, it will not automatically replace.

With this, I'd suggest using the Your Payment Details section for GBP customer and Message to customer or Add footer text for Euro customers. Also, let's make sure that we select the correct template before we send out invoices. Here's how to select a template on the Invoice page.
You can always run the Customer Balance Detail Report to manage the currencies, then customize it.

I have to be honest , that sounds like a complete hack !
Are you saying that bank details on one invoice template are under the "Payment Details" section and for another it must be somewhere else like the "Message to Customer" section?

That is possible. You can review the format that you've created by going to the Custom form styles.

I went into custom form styles and did what you said.
I have two invoice templates. Standard-GBP and Standard-EURO
The templates are identical except for the EFT details are different because we use different banks for Sterling and Euro.
If I follow what you suggested and change the EFT details on my Standard-GBP invoice template they are also changed on my Standard-EURO template. This information seems to be shared between all templates.
Can you confirm whether this is a bug or not as I have wasted a lot of time on this already?

Going back to Michelle's suggestion yesterday of using the Message to the Customer on one template and the EFT details section on the other does not work either.
If I update my GBP invoice template with the bank details in the Message section and remove anything in the EFT section - this just appears in my EURO invoice template as well. Whichever invoice template is updated last is what sticks. It looks to me like all templates are sharing these data segments!

Thank you for coming back here in QuickBooks Community and for providing additional information with your concerns.
Currently, there isn't an option to change this setup. The same bank information will automatically change the other template if we enter details on the same field. Once you enter info on the Message to the Customer and Your Payment details field, this will also show on the other template.
I'd suggest entering the bank or the payment details manually when using the template. This way, you can send and print the invoices with different styles and information to various customers.
Then, you can click the article provided by MichelleBh above about more further details with customizing your sales forms in QuickBooks Online.

Thanks for the update and confirmation that this does not work.
The terminology used in the product is very misleading. These are not templates as I would understand the term "template", or indeed, what is provided in the QB desktop version.
IMHO - having to update a template every time you use it is really a bit of a joke.
This is a major error / short coming for Quickbooks. Surely its a very simple fix.
This Post was from 2020 and now in 2023 I am still experiencing the same issue.
The Work Around (Which seems stupid)
1) Go to CUSTOM FORMS, CONTENT Tab and delete all Text from the YOUR PAYMENT DETAILS
2) Enter thr BANK DETAILS into the FOOTER Section
This was the only way I could have DIFFERENT Bank Details on the the Different Template/Forms
CRAZY But it worked.
