If you're using a mobile device and invoice dates are randomly changing, you may want to consider opening QuickBooks using any supported web browser to isolate the issue. If you're getting the same experience, you can go to the Audit Log report to see the changes or history of your transactions.
If there are some modifications from the audit history, then it's the reason why your invoice date and service date are randomly changing.
If no updates are made, you can try clearing your app's cache or fully uninstall, then install QuickBooks.

After that, check your invoices transactions and review the dates.

I'm also having an issue with invoice dates, due dates and payment dates on iOS since update 22.01.0
which at first seemed like the dates were being set randomly.
When creating a new invoice in the app and saving it, the invoice date appears as the day before, editing the invoice date to the following day seems to save it as the correct date (sometimes). This is the same for due dates and payment dates.
I can no longer send invoices to customers "on the go" as I have to wait to get back to the desktop to double check all the invoice dates, due dates and payment dates are accurate, requiring a lot more of my time to cross check everything.
"Refresh Data" is no longer an option in the iOS app as per your instructions to the OP and uninstalling and reinstalling the app does not rectify the issue.
There is no issue with the dates when creating an invoice on the web version of QB.
I submitted a bug report / feature request explaining this issue two weeks ago and another last week but no response, acknowledgment or fix.
This a high priority bug for basic functionality that needs attention or at least more attention than another bar chart.

Appreciate you reporting the behavior encountered on the dates when using the QuickBooks Online mobile app. Since you've done the basic troubleshooting on the mobile app and the issue persists on the app, we'd recommend contacting our Customer Care Team so they can escalate the unexpected behavior you've encountered. Since the Community is a public forum were unable to ask for your details here.
In the meantime, you can log in using a web browser on your phone and manually edit the dates of the invoice.
