How do I change Donors into customers?
It's easy to change the sales tab to donor.
Here are the steps to change it to donor from sales:
1 Sign in to your QuickBooks account and go to Dashboard.
2 Once you're in the Dashboard, copy and paste this link in URL field, https://qbo.intuit.com/app/setup?startIndex=0#0
3 On the set-up page under "What type of business do you have?" select Charity or Association.
4 Click Next and All set, you'll get back to the Dashboard.
The changes will not be abrupt, so please wait 24 hours.

I followed the instructions to change Donors to Customers but my Choir / Association still shows Donors.

After following the steps on how to change donors into customers, you can log out and log back in to refresh the changes. If you get the same thing, I'd suggest performing a few browser troubleshooting steps to isolate these kinds of issues.
Log in to QuickBooks Online using a private browser and update your settings from there. Then, press F5 to update. If you can see that donors are now showing as customers, you can switch back to the main browser and clear the cache. There are times that stored cache files cause an unusual response within the regular browser. You can also use other supported browsers to isolate these kinds of issues.

This is not working. The only category showing is LANLORD. Anyone able to assist/advise?

Changing the customer label is currently not an option in QBO for Australia. I recommend sending feedback by clicking on the Gear icon and choosing Feedback.
On the other hand, changing your tax type should do the trick, mentioned above. However, you'd want to select a different entity other than Charity or Association. Then, wait for 24 hours to see the effect. Or, contact our QBO Support to check this further using more tools.

Firstly, I am based in the UK. So not really using QBO Australia.
Secondly, I am trying to change Customers to Donors, not the other way round. Or better said, I am trying to change my QBO from being a limited company QBO to a charity/nonprofit QBO. Anyone got any advice?

The option to change customer labels to donors is only available in the United States region. As a workaround, you can use class or location categories to keep track of donations and sales/income. For more information, check this article: Get started with class tracking in QuickBooks Online.
