Glad to see you here, @NaomiC. I can share with you how to edit category expenses.
You seem not to see the Chart of Accounts in QuickBooks Self-Employed because this is currently unavailable. Also, you can change the category of the transactions, but we're unable to edit or rename them.
For more insights, you can also refer to this article: Categorise transactions in QuickBooks Self-Employed.
Additionally, let me attach this link to help you learn the basics of QuickBooks Self-Employed: QBSE Overview. It covers some insights on how to enter business transactions into your account.

Every time I hit save and close, it does nothing, and then gives a message stating "changing the type or detail type of an account may affect your accounting and reporting. Are you sure you want to do this?" I click yes, and nothing happens/changes.

I'm here to share some information about making account changes in QuickBooks Online.
Every account listed in your chart of accounts has both an account type and a detail type. Unlike account types, detail types don’t impact the actual accounting but they play an important role in your books.
This also helps you break down your account types into “categories” so it’s easier to see a breakdown of what your money is doing. If you're not familiar with the type of accounts, details types, and accounting practices, I'd recommend checking out these articles to learn more and make sure your books are accurate:

There are a bunch of people trying to reach this answer when you google this question. How to change categories in quickbooks. Thankfully someone added Expense category to the search so I found the answer eventually. Felt like I was tearing my hair out for something so simple as editing the category i just created.
