I can see the convenience of arranging bank transactions by date. I'm here to share basic troubleshooting to resolve this display issue.
I've replicated your concern on the Banking page and verified that the date displays according to the current or older transactions. The sorting includes the following page.
One of the reasons for the sudden display changes in the program is the cache piled up on your browser. To isolate this, let's use a private browser to access your QuickBooks account. It doesn't retain cache files that affect the program's performance, so we can isolate if this is a browser issue.
Here are the keyboard shortcuts you can use:
Once done, check to see if the bank transactions appear correctly. If this works, clear the browser's cache to start with a clean slate. Please ensure not to include the cookies as it may disconnect your bank and remove your transactions in the program. You can also use other supported browsers as alternatives.

I tested this in my QBO account and the date setting is applied to the next page. I can also see form previous replies that all possible troubleshooting that we can share in the Community have already been given to you.
