So i entered my stock 6 months ago as one set as an individual item. So first do I need to change that into bundle items? If so how can I do that without deleting the previous items that I have entered?

Making the bedsheet set as a bundle is optional. As for the individual items (bedsheet and pillow covers), you can enter them as inventory items starting on the date you prefer without deleting the previous items you entered.

Moreover, unbuilding or separating a product to form pieces from a whole item isn't possible since the assembly feature is unavailable in QBO.
