I need to create Vendor Credits for a specific payment date in the Sandbox Account.
The way Im creating them is:
Vendors->Vendor Credit.
or
Expense -> Expenses -> New Vendor Credit
After adding all the information and setting the payment date to December 2021, when I save it, it always shows up the payment date as the current date, never December 2021. Also, I try to edit it and same issue with the date.

When I entered a vendor credit with the same date you mentioned, I was able to successfully saved it. I may be using a US version of QuickBooks Online (QBO) account, however, please know they all work just like the same as with the International version. I've added a screenshot for your reference:
Since you're unable to enter a vendor credit with the December 2021 date, you can log into your account using a private window (incognito). Sometimes, your browser is full of frequently accessed page resources that may be the cause of unusual responses. To do so, follow the shortcut keys below:
Once logged in, you can try creating a vendor credit and double-check if you're able to save the date. If so, return to your default browser and clear the cache to speed up the loading process.
Every so often the cache becomes overwhelmed with older data which can potentially cause viewing and performance issues. Clearing it will refresh the system, and you'll be able to work with a clean slate. However, if the issue persists, try using other supported browsers.
Furthermore, QuickBooks offers a wide range variety of reports that tells you the different aspect of your business. You'll just have to customise them to make sure you get the information you need most. I've added this resource for your guide: Customise Reports In QuickBooks Online.
