Yes, QuickBooks Online doesn't have a sales order transaction type like in QuickBooks Desktop. What we do in QBO is we use the Estimate. We can create an estimate template and change the form name to Sales Order, so it'll be printed that way.
To use the template, click the Customise button at the bottom of an estimate and select the template name.
You can always go back to this thread if you have additional questions about this workaround.
Should you need that feature, consider having a 3rd party app specific to your busienss. e.g if you are trading goods, the inventory maangement app has the feature.
I see how you can "rename" the Estimate to a "Sales Order" but the function is still an estimate. If I have qty of 5 and ship only 2 and invoice only 2, I want my updated Sales Order to show a BACK ORDER of 3. How do you do this in QBO? Looks like you can't...??

You’re correct. The function of an estimate will remain the same, even renaming it to sales order. You may consider using a third-party app as suggested by our Community backer Fiat Lux – ASIA.
You can also visit your Apps menu. It contains several apps that compatible with QuickBooks Online. From there, you can look for a tool that has the ability to show backorder.
