I'd be delighted to share a few details about adding the company logo to your customer statements, @design-earlstone.
You can go to the Company settings to add your company logo. Once set up, the logo will automatically appear on the top right of the customer statement when you send it to your clients.

You can now send the customer statements that include the company logo on top of it.
On the other hand, the ability to change customer statements is unavailable for now. I know this could turn out your business more professional looking and authentic. In the meantime, I suggest submitting feedback by clicking the Gear icon on the top right. This way, our engineers will know that this is significant to your business.

I want to make sure your company logo will appear on the customer statement, @design-earlstone.
First of all, I appreciate you performing the steps provided by my peer Jovychris_A above and sharing the result with us.
Adding the logo from the Company settings should show on the customer statement. Since it doesn't appear on your end, let's reupload the company logo.
If you get the same result, let's try clearing your browser's cache. There are times that the browser you're using had a data issue, thus causing QuickBooks Online (QBO) to act weirdly.
If the issue persists, you may need to perform some troubleshooting steps when printing a PDF document. For more guidance, feel free to check out this article: Test sequence for PDF printing issues.
Once everything's fixed, you might want to see all your created customer statements to review them. To do so, you can go to the Sales menu, then select All sales and choose Statement from the Filter drop-down.
