I got you covered in fixing this missing This financial year option on the Sales section so it will be visible again.
The This financial year option is still available from the drop-down section of the dates in the Sales tab. Please see the screenshot attached for your reference:
However, since this option is not visible on your end, let's go ahead and access your account on a private window. It can help us determine if the issue was caused by the corrupted data on your browser.
If the option is now showing up, you may go back to your regular browser and clear its cache. Web-based platforms like QBO collect cache files to save you time when loading repetitive data and images, but too much may lead to odd behavior like the one that you've experienced.

I have tried all the options you have replied with and even used 2 other browsers plus the Quickbooks App, and the option is not in the drop down list, as per the screenshot attached.
