Which iOS version is your device updated to? You can check this by opening the Settings, then tap General > About.
Do you get past the login screen on the app and does any of the home screen show? If you are able to, please add a screenshot as an attachment in your reply so that we can have a visual of the issue. Thank you.

I’m running 17.6.1 on iOS which is the latest update. I can login and it loads the home page, but doesn’t display any company information, or what tasks I can complete, invoice information or anything
Thats's great, thanks Ollie. Before we escalate this to our higher support team, please confirm if your device is connected to a VPN (Navigate to VPN & Device Management).
If you are connected to a VPN, please temporarily deactivate (toggle off) the VPN setting and reload the QuickBooks app.

It doesn’t make any difference if the VPN on my device is active or not. Have tried reinstalling without the VPN and it still won’t load any information
