Hi, I am just setting up QB online and I can't seem to input my VAT number. All the research I have done suggests going to taxes then edit VAT and edit settings....but I do not have edit VAT in Taxes.

Based on the screenshot that you shared, you have Edit HM Customs &Excise button instead of Edit VAT. Click on the drop-down list beside it and select Edit settings.
Then, proceed to adding your VAT registration number and click Save.

I'll provide information and steps so you're able to see the Edit VAT option on the Taxes page.
I suggest setting up first your VAT Centre to manage your VAT process. This way, you're able to see the Edit VAT option after setup.
Here's how:
After that, you can now see the Edit VAT option to enter your VAT number or make any changes from there . For additional information, you can check this article: Set up and edit VAT settings, VAT codes, and VAT rates.
If you already performed the steps above and the issue persists, let's check if we need to clear the cache. The browser may have been overloaded with outdated internet files.
I suggest logging in your QuickBooks account using a private browser. This way, you'll see if you get the same result. And, to verify if the issue is caused by a full cache. This might be also the reason that the Edit VAT option is missing.
Use these keyboard shortcuts based on the browser you're using.
If it works in incognito, I recommend clearing the cache of your regular browser. This removes the history or log of sites so you can start with a clean slate. You can check this article to see the steps: Clear cache and cookies to fix issues when using QuickBooks Online.
If the steps above didn't work, use another supported browser as alternatives.

I can provide clarifications about the steps provided by my peer above.
The setup taxes option only appears the first time you create VAT in QuickBooks Online. Based on your screenshot, I suggest clicking the drop-down arrow above the Add tax option and select Edit Settings.

As you can see clearly from my screen shot there is no drop down arrow to edit VAT!
