Do I have to use PayPal when I link my business account to QuickBooks

Hello lisa1, To confirm are you referring to the Paypal app which allows customers to pay directly through the invoice or connecting Paypal as a bank account to pull through transactions? Either way no you do not have to use the Paypal app or connect Paypal as a bank account.

You can use another 3rd party app to integrate with your QB Online and accept online payments, like this one
