I currently keep my own accounts as well as those of my husband, my sister, my brother-in-law and a small charity I help to manage, all on QuickBooks Pro 13. I understand that if I move to QuickBooks online I'd need one subscription per company, but can I transfer them all to one version of QuickBooks Desktop 2021?

Yes, you can transfer them all to one version in QuickBooks Desktop 2021. There are two ways to move your company files into the newer version of QuickBooks. You can either run a backup for each company file and restore them manually.
Let's open the older version of the program and create a copy. Let me walk you through how:
1. Go to the File at the top menu bar.
2. Select Backup Company and click Create Local Backup.
3. In the window, select Local Backup and then Next.
4. In the Local Backup Only section, select Browse and select where you want to save your backup company file.
5. When you're ready, click OK.
6. Select Save it now and Next.
Now you have a backup company file you can restore your company file. This file has a .qbb extension at the end of the file name.
Note: If you keep your backup company file on an external device like a USB or a hosting service like Box, you'll need to move it to your local hard drive first before you restore it. Then follow the steps:
1. Go to the File at the top menu bar.
2. Select Open or Restore Company.
3. Select Restore a backup copy and then Next.
4. Select Local backup and click Next.
5. Browse your computer for your backup company file. It should look like this: [Your company name].qbb.
6. Select a folder to decide where to save your restored company file. Then select Open.
7. Once ready, click Save.
I've attached an article you can use to learn more about how to upgrade your company file so it works in newer versions of QuickBooks Desktop: Upgrade your company files after you switch to a new version of QuickBooks Desktop.
Please let me know if you have any other issues or concerns about the company files. I'm always here to help. Have a great day!

You can still use QB Desktop to manage multi company files with a single license. If you don't mind to purchase the subscription license, you may upgrade to QBD 2021. Another option, you may consider purchasing a one time license of QBD 2019 thru a partner. Deploy a private cloud if required to let remote users access QuickBooks file(s) by internet.
