Hi My Dad owns a lorry how do I record fuel used?

You can record mileage through expenses in QuickBooks Online, we don't have a designated mileage tracker although this is planned for a future release. Someone else with in the Community may be able to provide a more detailed answer of how to record this to factor in tax purposes.
