I can see that our engineers working on an investigation to determine why details aren't saved when customising invoice templates.
We have also tracked all affected customers so we can send an email as soon as the issue is resolved. Having said that, please reach out to our phone or chat support teams and let them know to add you to INV-72361. They will be asking for your account details needed to add you to that list.
