Without getting into multi currency is there a way we can just use the euro symbol?

It's only possible to issue invoices in foreign currency once multicurrency is enabled - if you're not using/don't wish to upgrade for this feature, you could instead issue the invoice in Pound sterling, and then enter the converted Euro amount on the transaction description or memo field.
