So if 8 payrolls have been run since using Quickbooks payroll software, they would all need to be deleted and re-submitted?

That is correct, you will need to rollback to when you started using payroll, change the start date and then run the payrolls again. When resubmitting the FPS, make sure to select 'correction to earlier submission' as your reason for late submission.
