The information in your downloaded transactions depends on the data your bank shares with QuickBooks. Let's compare your bank's statement from your online banking with the downloaded ones in QuickBooks.
If they're showing different sets of information, I'd suggest reaching out to your bank's Customer Care Team to report this unexpected behaviour. Also, I'd recommend contacting our Customer Care Team since I am not able to look up your account's information here in the public forum. An agent will be able to access your account securely and conduct further investigation of the root cause of this issue.

It's great that you're now using the Open Banking, helmprops.
Starling Bank is one of those supported banks to use Open Banking connection. Just a heads up, the supported account type to use this connection for Starling Bank is only the Current Accounts. Non-supported account types may result to some errors. You can verify it with your bank to make sure it's supported and to see if they have issues. System errors from your bank can also trigger this behavior.

In addition, it will take 24 hours for your transactions to reflect in QuickBooks. On your Banking, we can also click on the Update button so that it will be updated in real-time.

The transaction names needs working on. I have to keep going into the app to work out who's who and manually tag everything which creates more work. A few examples:-
