You can register the casual workers as regular employees to pay them, track their paycheques, and taxes per paycheques issued. Let me show you how:
If you're using PaySuite, you can refer to this article to enter your employee information: Add or update an employee record.
You can include casual employees in your regular pay schedule or set a specific schedule for them . If you're not going to pay them, you can remove the employee from this payroll by selecting the slider next to their name.

Let me give you an example of the situation I am referring to.
A guy came to one of our shops to do a paid trial for a couple of days...unfortunately he left before giving us any kind of documents (ID, p45...) but he has been paid for those 2 days.
Now should I keep trying to contact him to do a payslip only for those 2 days or is there any other way to register the cost?

It would be a case of including them in your payroll on basic rate.Can we confirm are you using Advanced payroll, Standard payroll or Paysuite?
