To get through this, you'll want to check if you've set your chart of accounts settings correctly. If not, it could be the reason the transactions are not posted to their appropriate accounts. I'll input the steps below so you can proceed. These are the steps:

Is there any chance of the problem with the journals created by Payroll being sorted so they don't just show random memos as they do now?

Allow me to share some information on how journal entry numbers work in QuickBooks Online.
QuickBooks uses a numbering sequence for journal entries (and custom transaction numbers). The system automatically increases it by one based on the last number entered.
If it's randomly auto-populating, the sequence might've been changed manually. You can combine letters and numbers when entering Journal No. field into the screen.
