When sending invoices and other transactions, the default email address is email@example.com. Aside from Gmail email address, you won't be able to change it.
For Gmail or G-suite users, you can link your account to QuickBooks Online when sending invoices. It only takes a moment to do this.
Meanwhile, you can email yourself a copy when sending invoices to your customers. Here's how to set this function:

I'm pretty sure this only works for US registered QB.
There is no drop-down FROM menu.
There was (still is?) a GSuite app : Quickbooks Invoice by Gmail or similar name but not available for UK registered GSuite.
