Kristine Mae’s steps were for QuickBooks Online for the UK version. However, in your second set of screenshots, I can tell that you’re not using that version.
In your QuickBooks, you can remove the VAT information on your invoice if you remove your VAT number in the Business ID No. field of your Tax settings. I can see that it’s empty right now, and that leads me to think that you’re using an imported invoice template with pre-entered VAT information. You can remove the VAT info of your Word template, and re-import it.

For now, we're unable to delete the registration number in the invoice. You'll have to take out the information in the VAT settings so it'll no longer show in the sales form. Here's how:

Quickbooks (Ireland) would not let me remove the VAT number. If I did, it would indicate that it's a required field. Therefore the solution of removing the VAT number from the agency would not work for me. So the only solution was to create a new tax agency and when creating the new agency, do not enter a VAT ID number. Then, when using the new agency, it will not show the VAT number below my address in the header. (But now I need to make the old agency inactive and switch to the new agency for any recent transactions.)
I like having the VAT number below my address on the invoices, but when I set up my VAT agency, I was much too wordy, and so it looks awkward, especially since Quickbooks also adds "Registration Number.:" before the VAT number. Even if I change the name of the Agency, QB still will still only use the original name (which is another bug that should be fixed.) So to fix this, the solution is the same: Create a new tax agency. Use a simple name for the agency so that it shows just that before "Registration Number," and not something wordy like mine.
