It's awesome to hear that you're working with a wide variety of suppliers, including those that use other currencies and are from other countries. Making sure that your books reflect that is vital for keeping your numbers in balance, so I'd be happy to show you how it's done in QuickBooks Online.
QuickBooks Online Essentials and Plus plans have a feature you can turn on called Multicurrency. With that feature, it's possible to set up and assign currencies to accounts, customers, and suppliers so that you can have the confidence the transactions are recorded and calculated properly. This feature can be turned on under the Advanced tab in your Account and Settings area, which is accessed through the Gear icon. Once it's turned on, you'll see an option when setting up new Supplier profiles to assign the currency that applies to them.

It goes over what this feature is, how it works, and links you to other articles about it, included a more detailed look at how to turn it on and then assign it to different areas of your books, like suppliers.
