Welcome to Community! It's important that your QuickBooks Online Payroll information is being received by the correct party. I'd be happy to assist!
There are two areas in your QuickBooks Online account, to review and make any necessary changes. Let's start with your payroll settings. Follow these steps to update the email address;
1. Open your Settings ⚙ and select Payroll settings
2. Click on the Edit
3. Make the necessary changes
4. Hit Save
In addition, you'll want to ensure the previous bookkeeper is no longer listed as a user on the account. Here's a helpful guide for your reference, to assist with user management in QuickBooks Online.

I can't find how to delete my last bookkeeper email address, he keeps on receiving the payroll emails.

For assistance in removing this email, I recommend reaching out to the support team outside of the Community They'll be able to verify your account in the system to be able to make sure that the email in question is removed for notifications regarding payroll.
