Based on your explanation it sounds like there is corrupted data in your employee centre that is causing it to crash whenever you try to open it. When this happens there are a few things that can be attempted to fix it. First would be to run verify and rebuild until it either finds no issues or until the same error keeps popping up. You can run verify by going to File>Utilities>Verify Data and to run rebuild by going to File>Utilities>Rebuild Data. If the same error keeps showing up and rebuild is unable to fix it you can also run File Doctor on it.
Should both of those options still not work and QuickBooks Keeps crashing whenever you open your employee centre I recommend following the steps in this article.
