Changing ownership

We are selling our business and the new owners want a copy of our Quickbooks so the have the employee and some vendor information. How do I delete most of the data so they can only see what I want them to get.

What kind of data they ask? No CoA, no Customer list, no Item list, some Vendor list, all Employee list, no Transactions at all?

Welcome to Community!  Selling your business involves many areas of interest.  It's important that your QuickBooks data continues to meet the security standards, when it comes to sharing personal information.  For this reason, I recommend speaking with an accountant or legal professional prior to providing personal information of your employees, along with other areas of your books.
