Having the option to categorize your snap receipts is a great feature in the mobile app, to save valuable time when reviewing your transactions in QuickBooks Online. From the details you've provided, the custom categories are missing only in the mobile app under snap receipts. In this situation, there's a couple of things to look into. I'd be happy to help!
I'd recommend clearing the app data by going to the Menu in the lower right corner (3 horizontal lines) and then the small Gear in the upper left corner (beside the small person logo) and select Refresh Data . If you get the same result, you'll need to uninstall the app, reboot your mobile device and then install the app to ensure you have the most recent version.
