Thanks for joining us here in the QuickBooks Community! I know being able to email invoices to your customers is a great timesaver, but also appreciate that not every business needs or wants to use that option. Don't worry, I can absolutely go over creating invoices without having to enter an email address for your customer so that you can log the transaction in your books.
When working with QuickBooks Online, you can create invoices for your records, to print, and to send to your customers. It's all done on the same form, so when you click +New and then Invoice, all you need to do is leave the customer email field blank or remove the email if there is one there and then Save or Save and close the invoice transaction. I suspect you may be seeing Save and send as the button available at the bottom of your invoice. If that's the case, simply click the arrow on the righthand side of that button and choose Save and close instead. The program will remember that as your choice for next time around, too.

I prefer sending the invoice as a PDF in a custom email (not through QB) but when I create an invoice it forces me to input the customer's email. I end up putting my own email address in so that I can 'Send' the invoice.
