It's vital that your customers know the services you're providing them as well as the price for each part of a job. QuickBooks Online is a great tool able to help you create and send estimates to your clients to provide them some information about prices for what you're able to offer them. I can provide some information about estimates.
in order to see a list of Estimates, navigate to the Sales tab, then All Sales. Click on the Filter button and add a filter for Estimates as a transaction type. You can also add a filter for Status if you're looking to only see estimates that are still open or only those that have been accepted.

I need to be able to generate a report showing the total amount of open Estimates and the amount not yet invoiced. Is there a way to do this within QBO?

In order to view the amounts of open estimates as well as what is the amount not invoiced yet, you can check the report titled Estimates & Progress Invoicing Summary by Customer Report, This can be viewed in the Sales and customers section of the reports tab. It shows your estimate that has still an open balance, showing you the percent invoiced as well as the balance for each. There is also a total at the bottom of each customer so you can see each customer's non-invoiced balance as well as a total at the bottom that encompasses all non-invoiced estimates for your company.

This report is close to what I am looking for, however it shows all estimates -- there is no way to filter out completed projects (i.e. closed estimates) in that report.
Hi rpitka. I can see the benefit of being able to filter out completed projects in the report. Since this feature isn't available, I encourage you to send feedback to our engineers. You can do this by clicking on the Gear icon and looking for Feedback. In the meantime, I encourage you to check out this article here that shows you how to customize reports in QuickBooks.
