As you've noticed, setting up customers and other transactions in QuickBooks Self-Employed defaults to Canadian currency. That's because this version of QuickBooks doesn't have a multicurrency option at this time. I encourage you to leave feedback about this by clicking the Assistant option, typing in the word Feedback, and then following the prompts after hitting enter or send.
It sounds like having the ability to record transactions in different currencies is an essential part of your business. In that case, I recommend considering QuickBooks Online as an alternative. It still allows you the same ease-of-access cloud platform and supports invoices and expenses, as well as tax tracking. There are also many more features, such as multicurrency, that could be of use to you. The multicurrency feature is available in QuickBooks Online Essentials and Plus packages. Please note that making the switch from QuickBooks Self-Employed to QuickBooks Online would mean re-entering your data into the Online platform. Self-Employed and Online are two separate programs that currently can't transfer data from one to the other. If you decide to make the switch, simply go to qbo.ca's Plans & Pricing page and choose from one of the options under the For small business accounting section.

I would very much like the option to designate USD on my invoicing and turn off Sales Tax for those clients.
For the time being, utilize the invoicing feature in this 3rd party app to deal with multi currency transactions. You may release invoice and get paid in CAD, your client pay it in their local currency. It only supports QBO so you have to record the data manually in QBSE.
