Is there a way to edit/change the matching account (from my chart of accounts in QuickBooks Online) for some of my linked bank accounts without having to disconnect/unlink and reconnect the account? I have searched high and low for where and how to do this but can't see any way to edit the matching account without unlinking and re-linking it.

I appreciate you reaching out here. Welcome! When transactions have been accidentally categorized to the wrong account, QuickBooks Online has you covered. I'd be glad to assist, so you can reconcile your accounts with peace of mind!
To unmatch the transactions, follow these steps;
1. From the left menu, open Banking
2. Click on the tile for the associated bank account
3. Open the Categorized tab
4. Select all transactions that you need to unmatch
5. Hit Undo in the Action column.
The transactions will return to the For Review tab, where you can categorize them accordingly. Here's a detailed guide, for your reference. In addition, you can save valuable time by creating Bank Rules. This will enable QuickBooks to categorize your transactions for you, based on the rule you create.

Thank you @Trish_T , however that is not the problem I was asking about.
The problem is that when I linked one of my my bank accounts and one of my credit cards, I picked the wrong accounts from our chart of accounts. The process is a bit onerous and time consuming to disconnect and reconnect the accounts, so I was just wondering if there was an easier way to simply edit/change the chart of accounts account (in QBO) that these bank accounts are linked to, without having to disconnect and reconnect them, which requires going through the bank login and verification process.
If you are able to tell me the answer to that question, I would very much appreciate it.

@Trish_T that doesn't help me either, as that is not what my issue is about. Please refer to the attached screenshot which shows one of the accounts that is linked incorrectly. As you can see from the screenshot, there is a bank account currently linked to QBO account "USD CHEQUING (1168)". But the one I should have linked it to is 2 rows up from that, "1004 Bank US BMO".
I am starting to come to the conclusion that the answer to my original question is "no, there is no easy way to edit existing linked bank "connections". I guess I will just have to disconnect them and reconnect to the correct COA accounts.
