You can update your customer's credit card information through the Customer Information screen. I'd be happy to walk you through the steps.
Once done, you can only view the last 4 digits of the card number. You can check out this article for your reference: Edit Customer Information.

When I go Payment and Billing tab on QBO I can't find the fields to add credit card information to keep it on file. On desktop version I can see these fields. Are there some settings that need to be changed?

Great question! It's awesome to hear that you're familiar with QuickBooks Desktop. I know coming from Desktop to Online can take some getting used to, and I'm happy to go over the options in QuickBooks Online for keeping your customers' credit card details.
The customer profile's Payment and Billing tab doesn't have a field for entering credit card details like you'd see in QuickBooks Desktop. The only time you'll see the option to add credit card details to a customer profile is if you have QuickBooks Payments configured for your account. Even then, it's not a field like in QuickBooks Desktop where you'd see the full number all the time. At first there will be a button to add the credit card details, then only the last four numbers would show. Here are a couple of screenshots.

If you're hoping to simply keep the number there as a point of reference for yourself, you're welcome to use the Notes section on the customer profile. Check out this article to learn more about the customer profile section: Edit customer information

The notes section is not a field that is protected or can be restricted from employees/ users. I will put some feedback to QB to find an other way. I would prefer to have the payment field take the credit card number and display/view the complete card # with a prompted password.
I hear what you're saying @Mustangladyvictoria. The workaround to use the Notes field isn't the right fit for all businesses. Submitting feedback on this is a fantastic idea.
