I discovered that I can use the payroll detail report, export as excel, then add a column to compute the hourly wage by dividing the regular earnings by the regular hours.

In this situation, you can review the Payroll summary by employee and customize to a specific employee and date range as you see necessary. Here's how to run the report;
1. Open Reports from the left menu
2. Scroll down to the Payroll section
3. Select the Payroll summary by employee
4. Choose the Date range
5. Open Customize and select an employee from the ▼ dropdown menu under Who to include
6. In the What to include section, choose Total and details
7. Hit Run report

I asked if I could see a list of every time the employee's wage has been modified. The payroll summary report doesn't show anything like this.
So if I hired them 2020-01-01 at $20/hr and then at 2020-07-01 changed it to $21 and at 2021-03-01 changed it to $24... can I find that information somewhere?
I see what you're saying. The report you're looking for isn't available in QuickBooks. I can see the benefit of having this report and I encourage you to send feedback about this to our engineers. You can send feedback by clicking the Gear icon and looking for Feedback. Here's a helpful article that shows the Reports included in your QuickBooks subscription.
