The Stat holiday pay is mandatory, therefore it cannot be removed. However, based on your employee type, it's essential that you're able to set up the associated pay types accurately in keeping with government guidelines. I recommend reaching out to the support team outside of the Community, we would be happy to take a look into this further from our end. With your consent, they can review the employee details and make any changes necessary to ensure you payroll calculations are accurate. You can reach them by following one of these methods:

Jan 19th now and I'm processing for workers that did not have Jan 1st off. It is not calculating 1.5x.
Should I cancel payroll version and go to an excel form? I have a few pissed off employees right now thinking I'm trying to steal from them.

Thanks for reaching out about your payroll. QuickBooks Online is a great tool able to help you pay your employees by either cheque or direct deposit. I can point you in the right direction for assistance with payroll not calculating correctly.
For assistance with payroll not calculating correctly for stat holidays, I recommend reaching out to the QuickBooks Online Payroll support team outside of the Community. They'll be able to verify your account information in a secure setting so that they can view the pay run in question in the system to see the cause of the calculation being that way for the pay run. You can reach them suing these methods:
