In QuickBooks Online, we call jobs as Projects.

Good afternoon. It is my understanding that if you process payroll through QBO full service payroll that payroll expenses are not included in the profitability report. Is there another way to determine the profit and loss per job? I tried to run the profit and loss report from the reports menu, customize, filter, and selected by my customer:project, but still could not get the payroll expenses to appear (probably because the weekly timesheet used to enter the hours is a non-posting transaction, but I am not certain).

Profit and Loss report doesn't include customer jobs. However, you can run the Job Profitability report to determine how much money your company has made to date on the customer or job. Here are the steps that were also provided by my colleague CatherineB:

Unfortunately the profitability report under the projects area is not including payroll expenses. I was working with QBO chat support yesterday and was told that this was a known product issue. I came to the community boards hoping to find a workaround for this issue because currently the information on the profitability reports is not accurate.
We've got a new update, KB27529.
Payroll expenses are now part of the Project's profitability. Please go to Projects and select the project name. In the Overview tab, you can see the Payroll Expenses under Cost.
When you enter hours for payroll from the Project's profile, you'll be routed to the Single Time Activity page and enter the hours from there. Once you're ready to pay the employee, go to the Employees page and click on Run payroll. Select the pay period that has the date for the timesheet. Then, you'll see that the system automatically fills in the hours worked. Click on the Preview payroll button and click on Finish payroll.

With currently rolled out new Projects update, payroll expenses should be a posting type transaction in QBO Projects, if you see Overview tab under Projects.
Thanks for your help. For some reason, this is not working as the payroll expenses are not showing on the project overview even though I see the payroll transactions in the project transaction list as well as time activity on the time activity tab within projects. I will continue to work on figuring out the issue.

Allow me to jump in and help provide some additional information about the Project's profitability.
Are you using QuickBooks Online version? If so, the payroll expenses are not showing on the project overview since there isn't an option to add a customer on the employee's paycheck.The only expenses that will show on the project overview once you created an expense transaction with a customer's name.
