Please note that once you reconnect you might get duplicate transactions. To fix this you can exclude the duplicate entries.

Logged into PayPal and did not see anything pertaining to the issue. If I try to delete it in QB and re-add will it mess up any already managed transactions? Meaning will I have to re-do everything or no?

To answer your question, yes, if you choose to delete your bank institution in QuickBooks, it will remove all your transactions as well, requiring you to redo everything. For that reason, I'd suggest waiting until this issue is resolved.
In the meantime, you can manually add your transactions to QuickBooks Self-Employed to keep your account updated.
