Except for paychecks, we can actually change the payee on transactions. Would you mind giving us more about the transactions you're trying to edit? If possible, please include a screenshot. This way, I'll be able to replicate it using my test QBO company.
If you're working with automatically recalled transactions, changing the payee will also remove details from that payee's last transaction. For example, when you select a vendor's name on a check, QuickBooks Online fills in the entire check with the same information that you previously entered for that specific vendor.
You can update any of the fields and save the transaction if one or two info's have changed. Then, the new information will automatically fill in the following time you choose that customer, vendor, or employee.
