Is there a way to not see the total deposits on the dashboard or a way to turn on or off the ability to see it?

At this time, there isn't a way to remove the deposits from your dashboard as it is part of the sales data. However, you can turn off the Privacy of the dashboard to hide this information, but this will also prevent all your financial information from showing up. 

In doing this, just toggle the Privacy button at the top of the dashboard. Know that you can toggle it back if you want to see the information again. Please see the screenshot attached for your reference:
