I've created a work-around by entering the vendor's name after all the details, but I'd rather be able to turn off this default.

Here are eh steps on how to turn off the auto-filling of information from your previous transaction in QuickBooks Online (QBO).

Go to the Gear icon.
Select Account and Settings.
Choose Advanced on the left pane.
Click the pencil icon on Automation.
Uncheck the box for Pre-fill forms with previously entered content.
Click Save and then Done.
