I'll share with you the steps on how you can enter the payroll for last week in QuickBooks.
When setting up for payroll, make sure to select Yes when asked if you paid your employees in 2021. You'll be given an option to add prior payroll to your employees.
Then, start entering your employees' details and previous payroll in QuickBooks:
This option is only available if you haven't done regular payrolls yet. If you don't see this option when entering your employees' details (or if you've already run payroll), you'll want to contact our support.
They have the tools to force the system to add the last week's payroll and ensure your taxes and payroll amounts are correct. Here's how to contact them:

Press Ctrl + Alt + Y or Ctrl + Shift + Y to open the Setup YTD Amounts window. Select Next until you reach the Enter prior payments section. In the Enter tellthebell Prior Payments window, select Create Payment to enter all prior payroll tax and non-tax payroll liability payments you have made during the current or previous years.
