how do I restore from an earlier version if I need to?

I'm glad to good to hear from you today, toddlerner. I'd like to provide some information regarding backing up and restoring an earlier version in QuickBooks Online.
QuickBooks Online automatically backs your data so there's no need to save it on a flash drive or your computer. I've got an article that provides more details about this: Do I need to back up my data with QuickBooks Online?.
Also, restoring an earlier version in QuickBooks Online is currently unavailable. You can only backup and restore your data via a spreadsheet including but not limited to the following:
You might find this write-up interesting: Common questions about importing data to QuickBooks Online. On the same link, you'll find what types of supported format you can use to restore your data as well as the maximum of rows you can import.
You can post any additional questions about restoring and backing up issues in QuickBooks or if you have other concerns aside from this topic, please let me know. I'm all hands on deck working to make sure I've got you covered. Have a great rest of your day!
thank you for your reply, rose...
a question: what if I accidentally cancel my qbo subscription or something, what if an employee forgets to renew or something... how do I back up qbo and make sure I don't lose years of accounting data!??
is the only thing I can do is backup some of my data to spreadsheets?
if my subscription is accidentally cancelled, will qb hold the info for reinstatemtn??
thanks, -todd
Glad to see your post here in the Community, toddlerner.
Once you cancel your Quickbooks Online subscription, your data will be available in read-only access for 1 year from the date of cancellation.
Regarding the backup to spreadsheets, you can export to excel if you're using QuickBooks Online Plus and Essentials while for the QuickBooks Online Advance there is an option.
Here's how:

Thank you for getting back to us, @toddlerner.
Let me ease your confusion about creating a backup file in QuickBooks Online (QBO).
As mentioned by my colleague DebSheenD above, the option to create a backup of your QBO data is only available in the Advanced version. Since you don't know what version of QBO you're using, let's verify it first from the Billing & Subscription menu. Here's how:
If you're using the Advanced version of QBO, you can follow the steps provided by my peer above to create a backup. Then, learn how to restore the data from this article: Back up and restore your QuickBooks Online Advanced company (formerly ChronoBooks).
However, if you're using the QBO Plus or Essentials version, exporting the data into an Excel file will be the best option to backup your company file. And restore it using the Import feature. While you don't see a way to export your Chart of Accounts from the Export feature, you can do it by running the Account List report. Let me guide you how.
I'm adding this article for more guidance: Export reports, lists, and other data from QuickBooks Online.
Since you're new to QBO, here's an article you can read to learn how to get started: Get started with QuickBooks Online - Frequently Asked Questions.
Should you need any assistance managing your new QBO company file, I'm available here to help any time!
As an additional option, utilize an exporter tool to export many transaction types on your account.
