Will they have the ability to run payroll under my subscription/license when I send them a copy?
Yes, MilesR. They can run payroll.
I'll share details on what your client can do and can't do when you send them company your file. Check them below:
Since you don't want them to run payroll under your subscription, you can have an internal agreement with your client not to turn on the payroll.
For more details, read the Use the Accountant's Copy for reference.

You can create and send them the backup file (QBB). Ask them to use the trial license to restore the file. Which QBD Accountant year version do you run?
They recently bought Quickbooks so I assume they'd want to use that instead of a trial.
I believe their file is on 2020 QB.
Thank you for getting back in this thread, @MilesR. I'll be glad to share some details about sending your clients a copy of your data in QuickBooks Desktop (QBDT).
Yes, @Fiat Lux - ASIA is correct. You can create and send your clients the backup file (.qbb), so they can restore it in their QuickBooks Desktop application. However, there are things that you need to consider before sending them a copy of your file. Know that your clients should at least have a higher version or the same version with your QBDT so they can restore the file. That said, if you're using QuickBooks Accountant Desktop 2022 and they're using QuickBooks Desktop 2020, they won't be able to use it.
I recommend checking this article for more information about file compatibility in QBDT: Company file compatibility with QuickBooks Desktop when upgrading.
Once you're ready, visit this article so you can proceed to create a back up company file: Back up your QuickBooks Desktop company file.
Additionally, I've got you this article so you can help your clients restore a backup copy of your QBDT company file: Restore a backup of your company file.

If you are using QBD Accountant 2020 or 2021, your client will be able to restore the backup file on their QBD 2021 or 2022.
