If the service date is already turned on but you're still unable to see the field on your invoices, let's perform some troubleshooting steps to fix this. The issue might be caused by a data problem with your browser. At times, the browser stores frequently accessed data, which can result in unusual behaviors in any online platforms, including QuickBooks Online (QBO).
Let's try logging in to your QBO account using a private browser as it ignores websites from using cookies and doesn’t record any history and data.

I already have this field enabled. The disappearance of it only occurred after the 'new' invoice layout was forced on me. Now it doesn't exist. It is a vital field. Ridiculous.

If the problem persists, you'll need to go to your Accounts and Settings window and disable the Service date feature. Then, sign out of your account from QBO and sign in again. After that, you can enable your Service date feature again and go back to your new invoice layout to see the service date field.
Furthermore, you can also consider customizing your invoice and other sales forms in QuickBooks Online.
