I hear your sentiments, Glskunks. QuickBooks Online (QBO) has been gradually rolling out invoice software updates to 15% of our users.
To ensure that your default message appears on your invoices, manually select the Default option from the dropdown menu when sending them.
I also suggest reviewing your Audit Log to ensure that no unauthorized changes have been made to your account.

Why should I have to turn off settings? They should not be on without our permission!!! My DEFAULT settings were changed!! I'm so absolutely SICK of this crap! QBO has a lot of nerve and it's terribly inappropriate to conduct business in this manner. This a HUGE breach of trust. Intuit should be ashamed of these practices.
I agree that it's very upsetting that QB will just automatically change the verbiage within business's communication with its customers without permission or notification of the change!! You have no idea to the relationship and therefore should not change any default settings that were setup! I understand you're making enhancements that SOME may find helpful and beneficial, but those types of things should be communicated, and we should have the option to "OP IN" NOT "OP OUT".

I was on the phone for a while on Thursday with QBO reps., and again on Friday for an hour with a different rep. I've asked (demanded) several times for them to remove AI, remove BETA, and leave my defaults alone. There is no option for turning it off. It's the most ridiculous thing I've ever seen.

Turning off the Smart Draft Message when crafting the subject line of the message that accompanies their invoices is unavailable. For now, you can select your customized email by clicking on the drop-down arrow and choosing My Default.
In the meantime, you can share your feedback on the Payments Agent experience at any time while using these features. Simply click the Feedback button located at the top right of your invoice to provide your input.

Your comment is not helpful at all - this is typical for QBO online reps. And I don't believe you have any clue as to how I'm feeling about this. QBO has disrupted our work flow, created MORE work for us, it has contacted customers without our approval or knowledge (even a customer that we are not in contact with because of legal action), it has decided that AI knows better than I on how I should speak to my customers, and it has absolutely infuriated our staff.
The link you provided for customizing invoices is not accurate. It suggests things that are not relevant to my issue and the suggestions not even available as an option. Again, this is typical for QBO. I don't need help creating invoices or taking payments. I've been doing that for over six years. It's not worth wasting my time even looking at the other link.
WE HAVE TO CHANGE BACK TO OUR DEFAULTS EVERY FREAKING TIME WE SEND AN INVOICE!!! FIX IT ALREADY!!!
And as far as feedback goes, I submit feedback several times a day. It only fuels my frustration.

Just got an email from QB celebrating the increase of fees and their new AI crap. I would suggest filling out the survey and asking for the option to turn off all the AI and BETA. Dealing with these changes is necessary for me to conduct business, but such a colossal waste of my valuable time.
