Customizing the format of your checks is unavailable. You'll want to change the alignment first before printing them. You can read through this article to learn more: Align how your checks print.

I am needing to put the check in the middle and not on the top

It would seem to me that it shouldn't be too difficult, given the size of Intuit, to allow users to choose between top, middle, or bottom checks!

You'll want to go to the Customer Feedback page to let our product team know that being able to choose a format to print checks is important and benefits your business needs. To do this, you can click on the Give Feedback option to send a request. I've added this screenshot for your guide:
Aside from customizing your transactions, QuickBooks also offers a wide range of reports so it would show the data you need. You'll just have to customize them so it will give you the correct information you need most.
